Once the carrots have got to a reasonable size you can pick them anytime. Young carrots are very tasty and are good in soups etc. You can dig out your carrots as you need them, as the season progresses your carrots will get bigger. Dig them out using a garden folk. Cut the green tops off and store in a dry spot in the house. Carrots will keep out of the fridge for a number of weeks. If you want you can also place them in the vegetable compartment of the fridge. Carrots also freeze well.
